dinner for one ..or two

here’s a simple dinner recipe I came up with when it was just my mom and I at home for dinner. For those who are looking for recipes that can be easily made for one or two people, give this a try.

Baked Sugar Lime Chicken Thighs:
You’ll need – 2 large chicken thighs, 1 cup soy sauce, 1/4 cup of chopped fresh parsley and thyme, 1 tablespoon of brown sugar,  1 shallot – diced, 1 tsp cayenne pepper, 2 tsp lime juice,  1 tsp chopped garlic

1. set aside the chicken thighs, and in a medium sized pan, whisk together all the remaining ingredients in med-low heat
2. let it simmer, turn off heat and set aside to cool
3. Once it’s cooled, pour the marinating sauce over the chicken thighs, let it marinate for 2 hours
4. After 2 hours, Preheat oven to 450F/235 C
5. Put the chicken thighs in the oven on a non stick baking pan, set it for 25 minutes, flip the chicken thighs on the 12th minute to ensure they are cooked thoroughly

Zesty balsamic Shell Pasta salad:

You’ll need:  2 cups of Shell Pasta, 2 small cucumbers sliced, 1 large tomato sliced, 2 stalks of chopped celery sticks, 2 cups of fresh baby spinach,
for the salad dressing:
1/2 cup balsamic vinegar, 1/2 cup Japanese sesame/soy sauce salad dressing, 1 shallot- diced, 1 tsp chopped garlic, 1 tsp of salt, 2 tsp brown sugar

1. Boil the shell pasta over medium heat, once it softens, drain the pasta and set aside
2. in a medium sauce pan, whisk together all the salad dressing ingredients over low heat, let it simmer, set aside to cool
3. in a large bowl combine all the pasta, vegetables and dressing together and mix well
4. add black pepper and mixed herbs for seasoning
5. if you like the salad colder, then leave it the refrigerator for a longer period of time
serves 2-3

this is the Japanese dressing I was talking about earlier, it’s great for the recipe above or alone!

    But interesting recipes. Food for thought: did you buy that salad vinegar or whatever that sauce is, because of its logo ;)
